Remove the Word ‘Category’ from WordPress URL

I’ve just updated WordPress to version 2.8.4 (finally) and upgraded a few plugins including my All in One SEO pack. Unfortunately during this exercise, I overwrote some custom modifications I made when I originally set up my site in WordPress a couple months ago. All of a sudden my URLs reverted back to this horrible structure:
www.domain-name.com/category/category-name/

I want (and had set up) this URL structure:
www.domain-name.com/category-name/

So for others and as a reminder to myself – How to remove the word ‘category’ from the WordPress URL structure. This is especially helpful for SEO purposes by making your category names the second level just underneath your domain and deleting the useless word ‘category’ from the URL structure.
